
It’s officially the holiday season and Bruster’s is back with their holiday ice cream flavors. Every year I look forward to enjoying their Peppermint Oreo Ice Cream. Another popular holiday ice cream flavor is their Eggnog Ice cream. If you love eggnog during the holidays, be sure to try this flavor out.
When it comes to making holiday desserts, I love experimenting and creating new treats. Since it has been relatively warm here in Georgia, I figured why not incorporate one of my favorite holiday ice cream flavors into a holiday treat. I decided to make Chocolate Covered Ice Cream Bites. Think of these as mini ice cream squares topped with your favorite holiday sprinkles.
They are so easy to make but do require a little preparation ahead of time. For this recipe, you will need about a half-gallon of your favorite Bruster’s holiday ice cream flavor. In this case, I went with the Peppermint Oreo. You will also need either semi-sweet or dark chocolate chips. Both taste equally amazing.
Keep in mind, if you decide to make this, you will want to make these 24 – 48 hours before serving. Since Bruster’s Ice Cream is made fresh the ice cream tends to be softer so you will want to freeze the ice cream at least 24 hours or longer if possible. When you are getting ready to make the bites, you will want to work quickly. The ice cream may melt in the process so be prepared to place your serving dish in the freezer in between dips.
INGREDIENTS:
1/2 gallon of your favorite Bruster’s Holiday Flavored Ice Cream
1 1/2 cups of semi-sweet or dark chocolate chips
1/4 cups of vegetable oil or coconut oil (vegetable was used in my recipe)
HOW TO:
Step 1: Line a cookie sheet or an 8×8 pan with parchment paper. Be sure to have extra parchment paper on the sides because we will use this to cover the ice cream.
Step 2: Scoop ice cream into the sheet pan and make sure you pack the ice cream in.
Step 3: Using a spatula press the ice cream down and create a smooth surface. You want to make sure the ice cream is fully packed so that there are no air pockets.
Step 4: Once the ice cream is packed and solid, cover the ice cream and freeze for at least 24 hours.
Step 5: After the freezing period, you will prepare your chocolate sauce and your toppings. Again, due to the nature of the ice cream, you will want to work very fast so making sure that you have everything out and ready is key.
Step 6: Mix your semi-sweet chocolate chips and oil of choice in a bowl. Microwave in increments of 30-45 seconds until melted. Set aside and let the chocolate cool completely
Step 7: Transfer your ice cream to a cutting board and cut into square or rectangles.
Step 8: Using a toothpick, dip the ice cream into the chocolate, sprinkle holiday sprinkles on the top and set aside or freeze. Work in small batches to avoid your ice cream from melting fast.
These treats are so fun to make and, I highly recommend using the Peppermint Oreo ice cream. The Oreo chunks in the ice cream make a delicious hidden surprise in each bite! I would also encourage you to make these over the holidays with your little ones. They can put their favorite sprinkles on top and enjoy!
